Planetary vs Spiral
Planetary: The attachment orbits the bowl while spinning. Best for versatility — one mixer does dough, batter, whipped cream, meringue with different attachments. Most common in general kitchens and bakeries mixing various products.
Spiral: The bowl rotates while a fixed spiral hook kneads. Superior for dough — develops gluten better, runs cooler, handles higher hydration. Pizza, bread, bagel operations. Not for batter or whipping.
Capacity and Sizing
Commercial mixers are measured in quarts. 20 qt: Entry commercial. Up to 25 lbs of pizza dough or 15 lbs of bread dough per batch. Most popular size.
30-40 qt: Medium production. 40-60 lbs dough capacity.
60-80 qt: High-volume bakery.
Important: the 'lbs of flour' rating matters more than quarts for dough — check the spec, not just the bowl size.
Gear-Driven vs Belt-Driven
Gear-driven (Hobart style): Metal gears transmit power. Built like a tank, lasts decades, heavy. The classic. Can't be stalled by stiff dough. Repairable when something breaks.
Belt-driven: Rubber belt connects motor to transmission. Lighter, cheaper, quieter. Belt slips under extreme load (saves the motor but stops mixing). Belts wear out and need replacement. Fine for batter and medium dough.
Used Checklist
Listen for gear noise — grinding or whining means worn gears (expensive repair). Check the bowl lift mechanism (manual crank or electric) goes up/down smoothly. Inspect attachment hub — is it rusted, stripped, or bent? Run the mixer through all speeds. Check the power cord isn't frayed (common on old Hobarts). Ask about service history — these things are repairable forever but need periodic gear oil changes.
Brand Tiers
The Gold Standard: Hobart. The N50 (5 qt), D300 (30 qt), and Legacy series. Last 40+ years with maintenance. Parts abundantly available. Holds resale value.
Solid Alternatives: Globe, Univex. Similar build to Hobart, often cheaper used. Acceptable for medium-duty.
Budget: Avantco, Omcan. Newer imports. Fine for light use but not heirloom machines.
